Building a restaurant operating model before launch

For Matter by iCoffee, Gergana developed the operational foundation required for opening, including SOPs, process flows, kitchen operations, manpower planning, recruitment, staff training, menu development and supplier sourcing.

The restaurant launched with a trained team and established operating procedures.

International programme and event delivery

Gergana has supported major international football programmes across three stakeholder environments: FIFA Club World Cup 2009 — representing Al Jazira FC’s venue-side delivery requirements at Mohammed Bin Zayed Stadium; FIFA Club World Cup 2010 — working from the FIFA Local Organising Committee side; and the FIFA U-17 World Cup — working directly for FIFA.
